... and what's now??? I'm just enjoying a crackling wood fire, admiring deers through the window, dreaming of one of these legs bathing overnight with love in an earthy red wine from the Languedoc & herbs, getting ready for a roasting dry sauna session with a window view on the kitchen!!!

Then I woke up in the sound of one of the fire truck siren from The Dragon Fighters in Chinatown.

Well instead, I"ll dig with voracity in Jose's BACALHAO on Sunday!!! With that said, I'm cracking a bottle of Mendall "5 Anys i ! Dia" from Laureano Serres. a delish of slightly oxydised white wine that put my mouth straight back to normal after the horrible taste of my toothpaste. Stephane Grapelli's playing on the radio some beautiful jazz. I just dropped a huge log in the fire and it's time to cook breakfast now. I'll go with my favorite soft boiled eggs, with little stripes of toasted bread spreaded with butter that I'll dunk right in the egg yolk along with some home made Rillons (with the real Arome Patrel)!!! No matter what, breakfast's the best meal of the day. May be I'll have a glass (or two) of Morgon, some "Cote de Py" 09 might help wash it down.

Quiet some other wines have landed recently, getting more into a "wintery" mood with richer wines from Spain, Italy and France : Thierry Navarre, Yo-Yo, Jean-Sebastien Gioan, Laureano Serres, Bruno Pasquero, Marcel Lapierre, Puzelat/Bonhomme, Leon Barral, Maxime Magnon, Nicolas Vauthier, Frank Cornelissen, some great leftover Tavel from Pfifferling... All about love and yummyness!!!

And while I'm at, I'll make a nice Cabbage soup with bacon to go along with.

Big thoughts about being able to drink the wine when it's ready rather than following the dictatorship of the calendar that says that the Beaujolais is ready for the third Thursday of November. Jules Chauvet, at the time, would release the Beaujolais Nouveau only when it was ready to drink, so sometimes 2 weeks after the so called "Official Date"!

The Vin Nouveau, Called Primeur in other region, are very interesting wines. As Thierry Puzelat wrote to me this morning : "The tradition of Vin Nouveau is not only the big commercial mess we know, it is an oenologic reallity : just after fermentations and for a few weeks, wines taste good. Close to their fermentation, they express a simple fruit and smoothness that they won't express anymore. So if we respect the normal life of the wine, those Primeur can be very "ready to drink".

We can't agree more, and I would like to add that we're kind of sad here, in New-York, not to be able to enjoy more of these wines!!! So here's my call to our favorite importers, bring us those juices that we're craving for, they are the core of our drinking needs by their youth & freshness, they are the one that gonna help us wait with patience to drink their older brother that will come to us with full maturity and depth!!!

Marcel Lapierre past away last night. The family of winemakers and wine lovers is very sad today and we're all joining to share our deepest thoughts with the family.

From 1973 on, Marcel Lapierre put his heart and sweat to bring us amazing wines. Disciple of Jules Chauvet, he inspired many people who are today following his steps in the way of making wine. Has he was saying, "The wine is not natural, you have to guide him. It's natural in opposition of industrial and formated wine"!

We'll gather @ The Ten Bells on Tuesday, October 12th @ 7.00 p.m to honor him (expect to drink a lots of Gamay)!!!
